The Olive Trees belonging to the Mill of the Shadowes

Unique in the whole south of France, the region is endowed with 120,000 olive trees, ideally exposed to the sunshine of the Provence, which slowly ripens their juicy pulp. One of the secrets of maintaining the pure, natural character of the juices is to maintain strict control of the fruit all the way up to harvesting and the milling of the olives. The time between plucking the olives and crushing them at the mill is critical, and has to be minimised to avoid any deterioration of the oil by oxidation. To this end we have installed the mill right inside the plantation itself.
